We pride ourselves in making the best gumbo there is. Dark roux slowly simmered for hours with the holy trinity; onions, bell pepper, celery; house smoked whole duck & sliced andouille. Simmer to desired temperature. Serve over rice. Garnish with chopped green onion. Serves up to 4 people.
