Dark roux slowly simmered for hours with the holy trinity; onions, bell pepper, celery; medium gulf shrimp, Louisiana crawfish tails, & Louisiana blue crab fingers. Simmer on stove to desired temperature and serve over rice. Garnish with green onions. Serves up to 4 people.
