This is the gumbo we serve every year at Jazzfest! We pride ourselves in making the best gumbo there is. Dark roux slowly simmered for hours with the holy trinity; onions, bell pepper, celery; house smoked quail, pheasant, & sliced andouille. Garnish with green onions. Simmer to desired temperature. Serve over rice. Serves up to 4 people.
